Receptet må verka avancerat eftersom det innehåller många ingredienser och det är mycket text här nedan att läsa. Men, läs igenom hela receptet först så ser ni att det inte alls är speciellt svårt. Du behöver:
Botten:
4 ägg
2 dl strösocker
2,5 dl vetemjöl
2 tsk vaniljsocker
2 tsk bakpulver
Äppelkompott:
300 g rivet äpple
3 dl vatten
0,5 dl strösocker
1,5 msk potatismjöl
1 dl marsánpulver
1 msk vaniljsocker
Mandelkräm:
200 g sötmandel, skållad
1 dl florsocker
2 äggvitor
Färskostvisp:
175 g philadelphia
5 dl vispgrädde
1 dl florsocker
2 tsk vaniljsocker
Dekor:
1,5 dl vispgrädde
Lite Dulce de leche eller kolasås
6-8 st Rollokola
Några torkade äppelskivor
En nypa kardemumma
Gör så här:
1 – Äppelkompott: Skölj äpplena och riv dem fint (behåll skalet på) i en kastrull. Rör i resterande ingredienser och låt blandningen koka upp under konstant omrörning. Så snart kompotten börjar bubbla så kan du ta bort den från plattan och hälla över i en ren kall skål. Låt svalna och ställ in i kylskåp i minst 4 timmar.
2 – Botten: Sätt ugnen på 180°C. Kläm fast ett bakplåtspapper i botten av en springform. Vispa ägg och socker fluffigt med elvisp i 5 minuter. Sikta ner de torra ingredienserna och rör försiktigt ihop (du vill behålla så mycket luft som möjligt). Häll smeten i formen och grädda i nedre delen av ugnen i ca 35 minuter. Låt svalna.
3 – Mandelkräm: Skålla mandeln genom att lägga dem i en kastrull med vatten och låta det koka upp. Häll av vattnet, låt svalna något och tryck sedan bort skalet enkelt med fingrarna. Mixa mandel med florsocker och äggvita till en len kräm.
4 – Färskostvisp: Vispa upp ingredienserna till ett fast fluff med elvisp.
5 – Montering: Dela din tårtbotten i 3 anslag. Placera den tjockaste delen i botten. Bre ut ett lager med äppelkompott, ett lager färskostvisp samt mandelkräm. (Om mandelkrämen är svår att bre ut så kan du röra ihop den med lite färskostvisp först). Lägg på nästa anslag och fyll det på samma sätt. Lägg på sista anslaget och spackla nu runt hela tårtan med det som återstår av färskostvispen.
6 – Dekor: Du kan dekorera tårtan som du vill, men jag föredrar att dekorera med något som återfinns i fyllningen i tårtan. Här har jag valt torkade äppelskivor, rullad Rollokola, lite kardemumma för höstkänslan samt uppvispad grädde smaksatt med lite kola. Längre ner på sidan har jag skrivit ut hur du gör rullad Rollokola samt torkade äppelskivor om du önskar att använda det.
Rollokola:
Lägg ut Rollokola (en bit ifrån varandra eftersom de kommer flyta ut) på en plåt med bakplåtspapper. Värm kolan mitt i ugnen på 150°C i cirka 5 minuter. Ta ut och låt svalna något så att du inte bränner dig när du tar i kolan med handen. Forma/rulla kolan medan den fortfarande är varm och mjuk. Låt sedan svalna helt och stelna.
Torkade äppelskivor:
Skiva äpplet tunt och lägg på en plåt med bakplåtspapper. Torka dem mitt i ugnen på 150°C i cirka 1 timme.
