Jag försöker hela tiden baka eget bröd som ska funka – men om det inte är endast vetemjöl i så uppkommer skepsisen. Är ni fler som har samma “problem”? Vetemjöl är såklart det vanligaste mjölet i bröd och jag använder det mest, men jag tycker om att smyga in lite fiber här och där. Här är då äntligen ett bröd som ALLA i familjen tycker om! Få ingredienser, enkelt att göra, jäser bara en gång och väldigt lätt att tycka om! ♥
Till 8 stora eller 16 små bröd/frallor behöver du:
25 g jäst
4 dl ljummet vatten
25 g rumstempererat smör
2 msk flytande honung
1,5 tsk salt
630 g (10-11 dl) vetemjöl special
Gör så här:
1 – Smula sönder jästen i en bunke (ta en stor så det finns utrymme för degen att jäsa).
2 – Värm vattnet till ca 37°C. Hellre lite lägre temperatur om du är osäker. Häll vattnet över jästen och rör så att den löses upp.
3 – Blanda ner smör, honung, salt och sist mjölet. Ta lite mjöl i taget så att du har koll på att du inte får för mycket mjöl i. Knåda degen tills den går ihop och känns smidig. Degen ska vara lite kladdig (men ändå släppa från bunkens kanter) när den är klar.
4 – Låt sedan degen jäsa i bunken, under handduk i ca 2 timmar.
5 – Sätt ugnen på 230°C.
6 – Stjälp ut degen på lätt mjölat bakbord. Knåda inte degen, då förstörs luftbubblorna (och dessa vill vi ju ha kvar!). Dela degen med t ex en degskrapa eller smörkniv till önskat antal jämnstora bitar.
7 – Skvätt lite vatten längst ner i ugnen. Grädda i mitten ca 15 minuter.
