Gör så här:
1 – Sätt ugnen på 175°C. Ställ ut 12 st muffinsformar på en ugnsplåt, eller använd en muffinsplåt.
2 – Mixa havregrynen till ett fint mjöl i en hushållsmixer (det går också bra att köpa färdigt havremjöl, men det är dyrare).
3 – Mosa bananen samt skala och riv äpplena.
4 – Vispa upp äggen ca 1 minut med elvisp. Tillsätt kesella, banan och äpple och fortsätt vispa. Tillsätt sist det mixade havremjölet och bakpulver. Vispa eller rör ihop till en jämn smet.
5 – Fördela smeten i muffinsformarna. Tryck ner några blåbär i varje och toppa med riven kokos.
6 – Grädda mitt i ugnen i ca 20 minuter. Låt svalna.
